Pumpkin Spice Muffins

We have reached the all things pumpkin time of the year and I highly recommend you add these to your repertoire. So easy, so delicious and will be a hit with all your family and friends.

PUMPKIN SPICE MUFFINS
(12-18 muffins)

Ingredients:

  • 1 3/4 cup all purpose flour

  • 1 3/4 tsp pumpkin pie spice (recipe below to make your own)

  • 1 tsp. cinnamon

  • 1 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1/2 tsp. salt

  • 1/2 cup packed light-brown sugar

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1 1/4 cups canned pumpkin puree

  • 2/3 cup vegetable oil

  • 1/4 cup 2% milk

  • 1 1/2 tsp. vanilla extract

Directions:

  1. Preheat oven to 375F. Prepare muffin pan with liners.

  2. In a bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder and salt until combined.

  3. In large bow, whisk together brown sugar, granulated sugar and eggs until light; add pumpkin puree, oil, milk and vanilla, and whisk until smooth. Stir in flour mixture until combined.

  4. Divide batter among muffin cups. Bake for 20 minutes (or until tester comes out clean).

  5. Let cool in pan on rack for 10 minutes. Remove from pan to cool

TIP: For a donut like top. Melt 1/3 cup butter in one bowl. Mix 1/3 cup granulated sugar with 1 tsp. pumpkin pie spiice in another bowl. Dip top of cooled muffins into melted butter then into sugar mixture.

PUMPKIN PIE SPICE RECIPE

  • 3 tbsp. cinnamon

  • 2 tbsp. ground ginger

  • 1 1/4 tsp. ground allspice

  • 1 tsp. ground clove

  • 1 tsp. ground nutmeg

In a bowl mix all together. Transfer to airtight container and use for coffee, oatmeal or chia pudding.
